Raw Zucchini & Mint Salad

This is a recipe I think I may have invented mostly by myself. I think it's a good option for summer, especially if you're signed up for a CSA that gives you lots of squash and/or you don't like lettuce that much.

Raw zucchini and mint salad

Ingredients:

One or two medium-to-large zucchinis or summer squash, diced
One small handful of fresh mint leaves, chiffonaded
One teaspoon of Lao Gan Ma chili crisp
A generous splash of olive oil.

Add all ingredients to a large bowl, then stir to combine. Let chill in the refrigerator for a bit before serving. Makes about 4 small bowls.
